Salmon Cakes

Salmon Cakes



Ingredients

1 (14.75 oz) canned salmon, drained and flaked
1/2 small onion, minced
2 eggs
1/2 cup fresh bread crumbs
1 Tbsp Worcestershire sauce
1/8 tsp hot sauce
1/4 tsp black pepper
1/4 cup shredded cheddar cheese
2 Tbsp chopped fresh parsley
2 Tbsp all purpose flour or Parmesan cheese (for coating)
1/4 cup butter
3 Tbsp olive oil

Directions: Combine salmon, onion, egg, bread crumbs, Worcestershire sauce, hot sauce, black pepper, cheese, and parsley; mix well. Shape into patties. Dust lightly with flour or Parmesan cheese. Chill for 20 minutes.
In large skillet heat butter and olive oil over medium high heat. Cook the patties until browned on both sides, about 10 minutes. Drain on paper towels before serving.

These were super yummy! Don't even need a sauce but would be good with tartar sauce or something like that. Some of my patties didn't stay together very well but I only used 1 egg. But they were still really great!

Cute pics








 Today Andrew slept almost the entire day. He woke up and we went to the doctor for 2 hours and then he went back to sleep until 5pm. Brandon was at jury duty all day, so I was just hanging out by myself. It was a pretty relaxing day. We went out to chilies tonight for dinner. There has been some really beautiful nights here lately! Andrew is pretty happy when he is awake and outside, but he just gets really tired fast.

Doctor's visit

So Andrew has Mono :( poor little guy. I took him to the doctor today. His ears are really red inside and so is his throat. And he has a stuffy nose still. He is breathing raspy. He has been asleep almost the entire day today. I wish I could help him out more! He is feeling so awful and there isn't much I can do :(

Children's Museum





























 
I finally have a camera again! I found the charger for the camera Mish gave us so I have one I can use while my other camera is broken. We thought we lost the charger somewhere. We have been looking for weeks in our house for it. So this morning I prayed and then an hour later found it right where we had looked a million times before. I don't know why I never think to just pray first. But I am very grateful we have it now. It has been killing me not to have a camera. 
  Today Andrew and I went to the Miami Children's Museum. It was so fun! He loved it! It has different themed rooms and lots of fun things to play with in each room. Andrew really liked the boat and fishing room. There was also an area he could crawl around in and play with blocks and mirrors and all sorts of things. We were there for 2 hours today. It was great! And it wore him out so he is taking a nice nap.

Scooting


 This past Friday we went to the Panthers playoff hockey game. Andrew loved it again :) He got a little scared at first from all the loud sounds but then he liked it. Andrew has gotten sick though. He has such a runny nose. I have put on his humidifier and got some vicks baby rub and saline nose spray. Those things seem to be helping. The poor little guy has just been tired and won't eat. I have been playing in my tennis league for a few weeks now. It is really fun. But I am not as good as I once was. I haven't won a match yet. But at least I give the guys a good match. It has been really nice to play tennis again; I missed it!

Funny

So today all Andrew wanted to do was type on Brandon's computer. So Brandon sat him in his lap to let him type in microsoft word. The first thing Andrew types is fooooooooood, hahaha. It was super funny! I don't know how he did it, but I was laughing so hard.

Easter

Well we made it back to Utah safe and sound. Andrew was awesome on the plane ride back as well. We just have to make sure we are sitting by cute girls and he is a happy little guy, haha. Andrew really missed the pool. He was so excited to go swimming when we got back. It was super nice to be somewhere else for a week though; everything feels new again here and I'm not so burned out anymore. We found out Brandon has Mono so at least we know what has been making him so sick now. He doesn't get fevers anymore, he is just really tired all the time.

Andrew has learned how to scoot! He can get anything he wants on the floor now. It is so exciting! He army crawls so fast; it is pretty incredible. He hasn't learned how to get his knees up yet, but he is a really good scooter. He is going to be into everything! He loves to go for cords on the floor, haha. We put up a cardboard fence around the tv area which he especially loves to grab things in. Just tonight it clicked in his mind that he could move and he would not stop until he wore himself out. I'm excited for the new stage. My camera is broken though so I haven't been able to record him; it has been killing me! I just found a store that will fix it though so I am going to do that first thing tomorrow. I have been using my phone camera, but it is not very good so the pictures don't turn out that great.

We had a  nice Sunday today. I taught a CTR class in primary and the kids were so enthralled in the Easter story. They were so good! I bought some foam Easter eggs for them to color and they loved that too. I colored some Easter eggs and bought an Easter Lily which is so pretty! Brandon didn't want to color eggs; someday Andrew will have to help me be festive, haha. Andrew's new favorite food to chew on is celery. He loves it! He can get little pieces off with his tooth and the just gnaws on it for out whole dinner.
